Make pasta in the traditional way, use a troccolaturo!
A troccolaturo is a small pasta rolling pin/cutter. It's the classic tool of the pastaio as well as one's "Nonna". The idea is to make fresh pasta, roll the pasta in 12-inch sheets, then roll the troccolaturo over the sheet. This cuts the pasta sheet into long pasta shapes like spaghetti, pappardelle, fettuccine, and tagliatelle.
