Semolina Flour is obtained from the milling of durum wheat. The semolina is ground several times to make kneading of the dough easier. Its amber color, balanced grains and elastic gluten make our semolina ideal for fried foods and also to sprinkle on top of foods resulting in golden, crispy creations.

Molino Caputo uses slow grinding techniques in order to not damage starches and proteins. Molino Caputo uses NO preservatives and NO additives but only pure wheat.

In their cookbook, San Francisco's, A16, recommends CAPUTO flour for making their fresh pasta recipes. As dry-pasta-fans, Natalia and I can personally attest that fresh pasta, made with Caputo flour, is the best pasta that we have ever made... OR EATEN!!

What are San Marzano Tomatoes? Why San Marzano Tomatoes?

San Marzano tomatoes, a variety of plum tomatoes, are considered by many chefs to be the best sauce tomatoes in the world. The story goes that the first seed of the San Marzano tomato came to Campania in 1770, as a gift from the Kingdom of Peru to the Kingdom of Naples and that it was planted in the area that corresponds to the present commune of San Marzano. They come from a small town of the same name near Naples, Italy and were first grown in volcanic soil in the shadow of Mount Vesuvius. The volcanic soil is believed to act as a filter for water impurities. Compared to the Roma Tomatoes with which most people are familiar, San Marzano tomatoes are thinner and pointier in shape. The flesh is much thicker with fewer seeds, and the taste is much stronger, more sweet and less acidic. Many people describe the taste as bittersweet, like high-quality chocolate. Because of their high quality and origins near Naples, San Marzano tomatoes have been designated as the only tomatoes that can be used for Vera Pizza Napoletana (True Neapolitan Pizza).

This extra virgin mono-varietal olive oil is only made with "Nocellara del Belice" olives from the province of Trapani, Sicily. The Nocellara del Belice gives it a very rich flavor profile with notes of artichokes & almonds and a peppery finish.

The cute little cans are decorated with a colorful scenery of Sicily and showcasing the cartina al' Siciliana. Its slow-pour spout is a great feature to this beautiful little package.

We are so proud to offer these wonderful pieces of art. Hand-made especially for FG pizza & Italian. These corzetti stamps are beautifully handcrafted to FG pizza's specifications. Here we offer a corzetti stamp made of solid walnut wood. (we also have them in Maple Wood.)

What is a corzetti stamp? It is a wooden tool, in two pieces, that assist the pastaiolo to make beautiful imprinted Ligurian pasta discs.

Since each corzetti stamp is hand-made, no two are exactly identical. Each include their own imperfections, adding to the authenticity of the final product. Together, both pieces stacked on top of each other stand approximately 5.75 inches high.

The base piece is both a "cutter" on one side and a decorative 5-sprig wheat design stamp on the other side. The top piece has a beautifully decorative knob handle that fits comfortably in ones hand, with a flower design stamp on the bottom end. The bottom stamp is approximately 2.5 inches high. The top portion is approximately 3.25 inches high. (sizes may vary slightly since these are handmade). The diameter of both the top and bottom stamp are the same, measuring about 1 7/8 inches.
